In this unique collab MFDF brings together acclaimed Manchester charcuterie specialists Woodalls and River Cottage's curing and smoking guru Steven Lamb. At Hugh Fearnley Whittingstall's idyllic HQ near Axminster, Devon, Steven runs courses in every aspect of charcuterie. If you want to learn how to make your own salami, pancetta or even bacon, don't miss his masterclass. Charcuterie derives from the French tradition of using pork and fat so that it could be sold uncooked through salting, turning into sausages or pâté. Salamin has its roots in Italy as a way of preserving meat. Our own Stretford based Woodalls is at the forefront of the artisan renaissance of charcuterie in the UK.
