Gastr-avaganza! The MFDF Big Festival Hub, Albert Square, 7-17th October 

This year's Festival Hub is happening on Albert Square for a big fat 10 days. This pop up food village will provide a gastro honeypot of food adventures with the Festival Bar, Street Food Fair, Harvey Nichols Wine Bar, Live Entertainment, and Gastro Room - the centre piece pavilion with an ever changing series of food events and activity including Chilli Lovers Fair, Chocolate Adventure, Festaurants, Hugh Fearnley Whittingstall and much more besides.

Open from 11am - 11pm daily and with entry completely FREE this is Manchester's food destination of the year so make sure you're a part of it!

The Festival Hub kicks off with a right Mancunian bang today as we bring you the Chilli Lovers Fair (featuring everything from growers to salsa!), the opening of the Street Food Fest with a host of the very best local and national foodies serving up gourmet food on the street, an Autumnal Local Beers Bar, a taste of what the Bavarians do best with our Oktoberfest Bierkeller, Harvey Nichols Wine Bar, delicious comfort food courtesy of Home Sweet Home and even more interesting eats in the Taste Garden. It'd be rude not to join in on our opening day shebang!

We rely on the quality and freshness of the base ingredients and don't mask things with over the top sickly toppings or seasonings. Almost Famous burgers are traditional dripping with goodness 100% ground Beefburgers served the traditional way.

The Festival Hub is transformed into a chocolate lovers paradise as the 'Chocolate Adventure' comes to town with producers, demos, tastings and our very first Pop Up Chocolate Factory. The Street Food Festival will continue to host the very best local and national foodies serving up gourmet food on the street.  Home Sweet Home will be serving their famous and rather delicious comfort food, while Harvey Nichols Wine Bar will be serving their very own label wine and nibbles. 12:00 - Anne Scott, Auberge du Chocolat

In 2005 Ian and Anne Scott decided to give up their stressful jobs as an accountant and pharmacist and turn Anne's hobby of chocolatiering into a business.

The couple subsequently opened their first shop, Auberge du Chocolat, in Gerrards Cross.

This was soon followed by another in Littlewick Green, Berkshire.

They have established the company as a significant presence in the premium chocolate business.

In March this year the company launched a chocolate workshop in Chesham and has now won four gold medals in the prestigious 2010 Great Taste awards for its Grey Goose Vodka Truffle, Rose Enrobed Champagne Truffle, Mango Fudge and Goats Milk Ice Cream.

Bar stage From 6.15 pm A Touch of Brass will be playing a selection of  faves from pop to trad with some  takes on bierkeller music to suit all tastes.

The Festival Hub will become uber family friendly zone, as the Festival's very first Kids Food Fest takes over the square. There will be lots to keep the little ones entertained through out the day including Waterstones Foodie Story Corner to Home Sweet Homes cookie making masterclasses - see Events tab for more details. The Street Food Fair will still be going strong with the very best Purveyors of gourmet street food. The Autumnal Local Beer Bar will still be serving local favourites alongside the Oktoberfest Beirkeller and Harvey Nichols Wine Bar, all complemented by chilled out live music across the afternoon.

We rely on the quality and freshness of the base ingredients and don't mask things with over the top sickly toppings or seasonings. Almost Famous burgers are traditional dripping with goodness 100% ground Beefburgers served the traditional way.

Also on offer will be mouthwatering buffalo-style chicken wings. They're dubbed crack-wings because of their addictive taste - juicy BBQ grilled wings finished with our take on a traditional Buffalo hot sauce; no dirty greasy frying, just good quality lip smacking ingredients, freshly prepared.

Chris Yates - the owner and executive chef of both the Shoulder of Mutton and the Elephant & Castle - has worked in some of the North West’s best kitchens with some of its top chefs.

His career began as a 16 year-old apprentice to Rochdale’s celebrity chef Andrew Nutter and it continued under chef patron Andrew Robinshaw at the legendary award-winning ‘Dining Room’ at Rawtenstall. Chris was the teenage senior chef de partie, there, when it won a 2-knife and fork Michelin Guide rating and was named Restaurant of the Year in the prestigious Hardens Guide. While chomping on a pickled egg in his favourite local pub, he had a brainwave: Let's put a pickled egg in a sausage and black-pudding coating, and wrap it in breadcrumb. The legend was born.

Its all chanage at the Festival Hub today as the Street Food Festival gets a revamp with a host of new street gourmands. Plus today the Gastro Room starts to play host to a full programme of cookery demos in the Live Cookery Theatre including celebrity chef Michael Caines at 1pm. Home Sweet Home's Gourmet Bake House also become transformed into a Hawaian BBQ today in full as Keko Moku come to the Square! 14:00 - Chris Yates, Shoulder of Mutton and The Elephant & Castle

Chris Yates - the owner and executive chef of both the Shoulder of Mutton and the Elephant & Castle - has worked in some of the North West’s best kitchens with some of its top chefs.

His career began as a 16 year-old apprentice to Rochdale’s celebrity chef Andrew Nutter and it continued under chef patron Andrew Robinshaw at the legendary award-winning ‘Dining Room’ at Rawtenstall. Chris was the teenage senior chef de partie, there, when it won a 2-knife and fork Michelin Guide rating and was named Restaurant of the Year in the prestigious Hardens Guide. Its Truly Good Food Day at the the Festival Hub as we gear up to welcome one of the UK's most talented food writers and broadcasters Hugh Fearnley-Whittingstall to the Live Cookery Theatre at 1pm. Inspired by his visit we're theming the whole day around sustainable food in association with Truly Good Food - a local schme which recognises restaurants commitment to health and sustainability. Their website launches today and visitors will be able to learn more about sustainable eating througbout the day. Local food heroes including celebrity chef Norman Musa are also on the line - up throughout the day. In the evening festival goers can look forward to a Smoked Meat Demo from the experts at Southern 11 and Tim Wilson from the renowned Ginger pig Farm in Yorkshire. Southern 11 will then take over the Gastro Room and present a slow cooked meat easy dinner as part of the festaurant series.

17:00 - Southern 11, Meat demo

This popular new American restaurant is home to the only Hickory wood burning smoker outside of London. Southern Eleven brings authentic smoked flavours famous in the eleven southern states

of America to this year’s food and drink festival. They will be holding a demo in the Live Cookery Theatre alongside the Tim Wilson from the world renowned Ginger Pig Farm in Yorkshire explaining about the different kinds of cuts of meat, how to trim meat and rub meat. You will then be able to taste samples of the meat that has been slow cooked.

Dinner will follow on from the demo and will be a set menu including either ribs, briskett and/or pulled pork. Tickets are be around £25 per person for the dinnner however entry into the demo is free. for more details and to book click here

Ah, the final Saturday at the Hub. A full programme of Chef Demos is on the menu today with a jam packed schedule of food theatre as the Gastro Room becomes the Live Cookery Venue for the weekend. Author Manju Malhi shows off her western approach to Indian cooking. Manju Malhi won the BBC's food and drink competition in 1999 and cooked with Antony Worrall Thompson on BBC 2, and was asked back a second time.

Stuart Collins is the newly appointed Executive Chef for the Michael Caines Restaurant at ABode Chester. Originally from Staffordshire, Stuart has just returned from New York, where he completed two years as Head Chef for Gordon Ramsay's acclaimed Maze Restaurant. Stuart will be demoing some of Michael Caines signature dishes on the day.

15:00 - Edd Kimber, The Boy who Bakes

Edd Kimber fought off competition from 4000 applicants to become the winner of The Great British Bake Off 2010 on BBC2. Since being crowned Britain’s best amateur baker Edd has appeared on a number of UK TV and radio programmes, including Market Kitchen and Perfect.... He has been gaining professional experience, most recently at Raymond Blanc’s Le Manoir in Oxford. Edd has also been running popular Macaron Classes in London, food blogging to an avid following and appearing at the BBC Good Food Show as well as food festivals around the country including Manchester in October

Internationally acclaimed chef Ryan Murphy brings a wealth of culinary experience to the Lowry Hotel and the River Restaurant, having worked in several Michelin-starred restaurants in the US, Sweden and Austria. Ryan began his illustrious career in his hometown of New York where during his studies; he worked at the renowned three-Michelin starred Daniel restaurant. From there, Ryan went his way through the ranks and spent time working with Alain Ducasse at Essex House and Jean-Georges Vongerichten at the Trump Tower.
