Polka Dot and Blueberry Brownie
Makes 12 bars
Ingredients
3 eggs
340g caster sugar
1 teaspoon vanilla extract
200g dark chocolate chips
70g white chocolate chips
2 tablespoons dried blueberries
170g butter
75g plain flour
75g cocoa powder
To Finish
Chocolate ganache
White chocolate chips
1) Beat eggs and sugar on high speed with an electric whisk until light and fluffy. Melt the butter, pour over the dark chocolate chips and partially melt the chips.
2) Add the chocolate mixture to batter and mix well. Reduce speed to low, add the flour and cocoa and finally fold in the white chocolate chips and blueberries. Turn out into a lined and buttered baking sheet.
3) Spread evenly and bake at 150ºC for 20-25 minutes until a crust forms on top but is still gooey underneath.
4) Leave to cool then smear with chocolate ganache and finish with white chocolate chips.
5) Slice into neat triangles and serve.
